Tips for Perfect Crispy Pork Skin
Speaking of crackling...Here’s how to get perfectly crispy pork skin every time:
1. Dry the skin: Pat dry and leave uncovered in the fridge for 24 hrs.
2. Score and salt: Score into the fat (not through it) and rub in salt just before cooking.
3. Cook with dry, direct heat:
Start at 220°C (430°F) for 20 mins.
Lower to 180°C (360°F) to cook through.
Finish with high heat to crisp the skin.
Avoid adding moisture (like liquids or veggies) during roasting—dry heat is key. Juicy meat, crispy skin, every time! For more information see this blog post.
