How To Prepare A Hip of Beef On the Roaster

Cuts

hips of beef can be called different things depending on the area you are from. A full hip is more likely to large to place on the machine without it catching. I suggest using a ponderosa hip or a steamship round. Ideally you are looking for a cut of beef that is around 40-80lb in size. Bone in is great for presentation but can make putting on the pole more difficult.

Preparation

So now that you have selected your cut of beef it is time to secure it to the roasting pole for cooking. this is as easy as sliding the pole through the thickest part and securing with 2 four prong clamps on either end. If you are using a bone in roast you may have difficulties in getting the pole through the large knuckle bone in the centre of the roast. just take your time and go around the bone with the pole if not you can bone the hip out and tie directly to the pole. After it is secured do a test fit inside the machine to make sure the width of the beef doesn’t catch on the sides and that it is balanced when spinning. Balancing is important so that the weight of the roast spinning doesn’t wobble to much and ruin your finished product or run the risk of the meat falling off the pole. Once everything is secure you can marinate the beef (overnight works best) with your favorite seasoning fresh herbs and garlic cloves.
