Recipe for our Porchetta,

Pork Belly, pork tenderloin, porchetta seasoning
Porchetta seasoning: Toasted fennel seeds, garlic salt, Kosher salt, rosemary, and thyme.
  • Score the skin of the pork belly and rub in plenty of  kosher salt 
  • Turn over the belly, and trim any excess fat off the belly
  • Rub the spice blend into the inside of the pork belly and all over the pork tenderloin
  • Roll the belly around the tenderloin and tie with butcher twine
Place in the rotisserie baskets or thread the pole through the belly and secure with 4 prong clamps
Roast at 400 deg until the meat reaches 165 degrees internal. Propbe the shoulder and ham of the pig to ensure meat is at tempurature.
